Green Garden Pea Soup (4 Serves)
600ml/ 1pint vegetable stock
450g/ 1lb fresh peas
A pinch of granulated sugar
125ml/ 4fl oz single cream
2 tbsp single cream
4 crusty bread rolls
Bring the stock to the boil in a large saucepan, then add the peas to cook for 5minutes.
Remove the pan from the heat, season with sugar, salt and pepper, then transfer to a food processor/blender and blend until it's smooth.
Pour into a saucepan, stir in the cream, while gently heating to simmering point.
Taste and adjust the seasoning if necessary, then pour into 4 serving bowls, adding a swirl of single cream to each bowl and serving with crusty bread rolls.
Chilled Avocado Soup (6 Serves)
4 peeled, ripe avocado
1 garlic clove
1.2 liters/2 pints vegetable stock
4 tbsp lime juice
A pinch of cayenne pepper
Salt and Pepper
2 tbsp chives, snipped to garnish
Dish with French bread
Put the avocados, garlic, stock, lime juice and cayenne into a food processor/blender and blend until it's smooth.
Season with salt and pepper to taste and leave to chill in the refrigerator until ready to serve with French bread and garnished with snipped chives
